Katsuobushi
The tuna is dried and smoked and then sliced into very thin flakes. These flakes are used to create, together with shiitake mushrooms, the famous “dashi” base of Japanese cuisine.
Our Japanese supplier is not only committed to careful and accurate processing, but also verifies the tuna caught, its origin, and the type of fishing used.
The raw material must always and only be of great quality, only in this way can a delicate, fragrant but firm dashi be created.
